Choco-chip waffle




Ingredients

1. 1 3/4 cups of all purpose flour
2. 1 3/4 tsp baking powder
3. 1/8 tsp salt
4. 2 large eggs
5. 1 large egg white
6. 1 1/2 cups of milk ( room temperature )
7. 1/2 tsp vanilla extract
8. 1/4 cup unsalted butter melted + more for brushing the waffle maker
9. 1/4 cup sugar
10. 1 cup mini choco-chips

Preparation

* Preheat a waffle iron to medium- high. Whisk the flour, baking powder and salt in a large bowl. Separate the 2 eggs and put all the whites in a large bowl.

*  In a large liquid measuring cup or medium bowl, whisk the egg yolks, milk, vanilla and 1/4 cup melted butter.

* Whisk until batter is formed. Do not over mix the batter. Whip the egg whites with a hand held electric mixture or whisk.

* Fold a third of the egg white into the batter to lighten the base.

* Gently fold in the chocolate chips. Brush the inside of the waffle maker with butter.

* Pour in enough batter to fill the each hole. Close and cook until crisp and waffle iron stops streaming ( about 5 mins).

* Serve hot with maple syrup, honey or jam.
