Choco-chip waffle




Ingredients

1. 1 3/4 cups of all purpose flour
2. 1 3/4 tsp baking powder
3. 1/8 tsp salt
4. 2 large eggs
5. 1 large egg white
6. 1 1/2 cups of milk ( room temperature )
7. 1/2 tsp vanilla extract
8. 1/4 cup unsalted butter melted + more for brushing the waffle maker
9. 1/4 cup sugar
10. 1 cup mini choco-chips

Preparation

* Preheat a waffle iron to medium- high. Whisk the flour, baking powder and salt in a large bowl. Separate the 2 eggs and put all the whites in a large bowl.

*  In a large liquid measuring cup or medium bowl, whisk the egg yolks, milk, vanilla and 1/4 cup melted butter.

* Whisk until batter is formed. Do not over mix the batter. Whip the egg whites with a hand held electric mixture or whisk.

* Fold a third of the egg white into the batter to lighten the base.

* Gently fold in the chocolate chips. Brush the inside of the waffle maker with butter.

* Pour in enough batter to fill the each hole. Close and cook until crisp and waffle iron stops streaming ( about 5 mins).

* Serve hot with maple syrup, honey or jam.

Coconut milk porridge ( thengai paal kanji, chettinad Special)



Ingredients:

Raw rice - 1 cup
Garlic pods - 20-25 pods
Fenugreek seeds- 3 teaspoons
Coconut milk - 1 1/2 cup of thick coconut milk or coconut milk taken from 1 full coconut.

Procedure:

Pressure cook the rice with fenugreek seeds, garlic, 4 cups of water and 1cup of coconut milk.Cook for 15 mins(4 to 5 whistles). As soon as you open the cooker add little salt, 1/2 coconut milk and 1/2 cup of hot water and smash the rice nicely using a ladle. This recipe doesn't need much salt.

Serve hot with papad or any vegetable fry.

Tip:

If your porridge consistency is thick, add desired amount of hot water to the porridge and mix well.

- Mustard oil is extremely good for hair growth.

- Applying this oil regularly will prevent your hair from graying.

Ingredients:

1. Mustard seeds - 250 gm

2. Henna leaves(2-3 cups) or henna powder(250 gm)

3. Coconut Oil - 1 liter (or) coconut oil-500 ml, olive oil-250 ml, almond oil-250 ml

Preparation:

1. Add coconut oil in an iron wok.
2. Add 250 gm of mustard seeds to the hot oil .
3. Add Henna leaves (washed and dried) or henna powder ( make a paste and add it to the oil).After adding the henna, immediately lower the flame.
4. Let it boil for 40 -50 mins in low flame.
5. Using a clean and dry cotton cloth filter the oil and store it in an air tight container.

* When ever you apply this oil warm them and apply it in your scalp and hair.

5 mins coffee mug chocolate cake (easy and quick recipe)



Ingredients:

4 tablespoons - all purpose flour/ maida
4 tablespoons - sugar
2 tablespoons - coco powder
3 tablespoons -  milk     
2 tablespoons - vegetable oil
2 tablespoons - butter
1 - egg
1 teaspoon - vanilla essence
2 teaspoons - coco chips (optional)

Method :

Whisk all the ingredients together and pour into coffee mug (don't fill the coffee mug with the cake mixture completely, leave some gap for the cake to raise up). Cook for 3-4 mins(in high) in microwave.
If you want, you can decorate the cake with what ever you like.

Caramel Custard



Steps:

1. Take a pan. Add sugar and very little water to it . When you get the perfect caramel consistency, switch off the flame.

2. Pour the caramel in another pan and spread it.

3. Take 3 eggs, 50 grams of sugar, few drops of vanilla essence and whisk them all together.After whisking, add 500 ml of milk.

4. Strain the mixture using a strainer and pour the mixture into the caramel pan.

5. Double boil(see the picture below) in low flame for few minutes until it is done.



For double boiling, add sufficient amount of water to the bottom vessel and on top of it keep the vessel which contains food.
